WHere is a simplified interpretation of a beverage featured on the seasonal cocktail list. It's a party-sized pre-mixed that is loaded with the flavours of the festive period, rendering it ideal for a holiday party. Reserve the remaining cordial to use in morning drinks, sweets, or to make additional servings of bikinis.
The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Combine the listed ingredients inside a pan, heat until it reaches a gentle boil, agitating to dissolve. Next, remove from the stove allowing it to reach room temperature fully. Transfer to a clean bottle, cap it and refrigerate it chilled, it will last for around one month.
Preparing the Premix: Mix the specified liquid ingredients into one big jug, allow it to infuse for an hour, then strain , ideally through a fine cloth, to ensure it's fully clarified.
When ready to serve: Add 85ml of your cocktail base to a cocktail shaker containing ice, gently stirring gently for about 60 seconds to chill. Strain into a frosted cocktail glass or equivalent, garnish with some cranberries and finish by giving it a brief mist of the essential oil above the glass.
